The DMV is DUMB!

This is me...He got it.
May the Lords help us all!

Wednesday, June 3, 2009

He flunked the vision test. So what did that mean? A trip to the eye clinic (where he just got new glasses after 2 visits for additional testing - which is a yearly routine for him ), with a form that has to be filled out by his doctor. The doctor wouldn't fill out the form til he sees, the J-Man again. Soooooooooo, back to the eye clinic tomorrow, and then to the DMV if the doctor "clears" him.

I don't get it. If his vision is so bad (which I believe it is), that he can't pass either of the vision tests at the DMV, why in double hockey sticks, would the DMV even consider letting him get a drivers license?

I'll keep you posted.

PRAY FOR ME

I need all your prayers today, as I am taking Big J to the DMV this morning...aaaaaaaaaaarrrrrrrrrrrrrg!

Well that's all for today. I've got an awful earache, so now the whole left side of my head HURTS. Ear, jaw, teeth, and my eye. I went to the doctors this morning, and she said it was a good thing that I got there when I did, because the eardrum was about ready to burst, and she thinks that my sinuses are infected too. She asked if my throat hurt, and I realized that it did... ...So, now I'm on three more medications. Oh Joy. But I am so ready for this pain to go away.

Love you all - talk at ya soon!

My Famous Baked Beans

My baked beans are really easy to make...but they are a little hard on the
waistline!

Brown a pound of ground round.

Fry up a pound of bacon. Make sure you get the bacon really crisp.

Tater Tot - this shot is just for you! Yummy, crisp bacon!!!

Open a big can of pork 'n beans (I prefer Showboat brand, but can't find it here in Cajun Country, so I used Campbells.), and dump them in a big bowl. Crumble the bacon and toss it in with the beans.

Throw in the cooked ground round.

Then toss in a pound (YES a Pound) of brown sugar. I prefer dark brown for this recipe.

Now add a big squirt of yellow mustard and three big squirts of ketchup.
Whats a big squirt? Well, I guess for the mustard, it would be less than a 1/4 of a cup...I think I probably put in a little over a 1/2 cup of ketchup (or catsup if you prefer).
Mix this all together and pour into a baking dish. I used my Big Daddy Princess House Miracle Dish. In retrospect I could have fit this batch of beans into the
2 qrt. Miracle Dish.

Bake at 325 - 350 degrees for several hours.

Mine didn't bake long enough because my men were complaining that they were starving to death and that they needed to eat right away. MEN! Could they just eat a snack - NO - they had to have beans...and hot dogs, and tater salad.

Here's the finished product.
IT should be thicker, and bubblier, and darker, and...baked longer!

And Puglette asked me for the potato salad recipe...
...so here it is:

Peel and dice a bunch of potatoes (I use red skinned - but not creamers), and throw them in a microwavable (I use a Tupperware Stack Cooker) container with a lid - and nuke them babies til they're easy to pierce with a fork. Let 'em sit for a bit, so that they aren't horribly hot. Then plop a big big big spoonful of mayo on them, and then a squirt of mustard, and some salt and pepper and a little bit of dill weed. Mix it up gently (cause we aren't making mashed spuds), then you must taste them. If it needs more mayo, or mustard, or salt, or pepper, or dill - just add it now, and then re-taste. When you're happy with it - put it in the fridge and keep it there till its good and cold. That's it! Easy Peasy.

One day, I'll give you the recipe for:
"Everything But The Kitchen Sink Potato Salad",
but this will have to do you for now.

Throwing you all big
{{{hugs}}}}
!
